in the process of wine making ripened grapes are crushed so that sugar and enzyme should come in contact with each other and fermentation should start what will happen if anaerobic condition are not maintained during this process

we know that anaerobic conditions are required for formation of ethanol or alcohol.
when anaerobic conditions aren't there to make alcohol out of crushed grapes mixed with sugar and enzyme then it's formation isn't going to happen as fermentation won't take place.
