Answer:

To paraphrase religion, “In the house of Science there are many mansions.” One scientific process is systematic sorting, selecting, encouraging, and discouraging to change the characteristics of a population. Humans have used this scientific process for thousands of years to change horses, dogs, cats, cattle, and crops. Modern statistical tools have made the process faster and more certain.

A newer scientific process is intentionally creating a large but random set of genetic changes in a plant population (not animals yet?). This can be done by radiating a lot of seeds. This creates more variations for the sorting, selecting, encouraging, and discouraging.

Another scientific process is deliberately changing something into something else. Humans have done this to (for example) tools for thousands of years. To a degree this can now be done in directly editing genes.

None of these are as fast or easy as God waving His hand and saying, “Let there be.” But the speed and ease with which changes can now be made would certainly seem god-like to the humans who wrote holy books.
