This is because most of what we taste is actually being sensed by our olfactory system. In contrast to taste human can perceive 5 quality ( sour , bitter , sweet , salty and umami)
Humans can smell 1000s of odorants .
therefore when your nose is blocked basically you can only taste the food and unable to smell , missing the majority of your food flavor . This is the reason why we are unable to taste anything when you had cold which means sugar as well
