Great question. I'm not sure, but I think what you're referring to is the Stream notification that an assignment was posted on the Classroom page. In this case, no, deleting the notification doesn't delete the assignment. However, if you don't want the notifications to display, I would recommend clicking the Settings gear, and in the line item for "Classwork on the Stream" change it to "Hide Notifications." (See below.)

This is how I set up all my classes. It removes the notifications from the students' Stream as well. Personally, I find it to be much less cluttered and easier to focus on the actual announcements from the teacher.
