It is commonly obserd that fruits and vegetables are first dried before making their pickles in high salt concentration. By drying it removes the water content in the cells of the vegetables which is used in the pickles. Less of water content in the cells make it difficult for the bacteria to survive in the dry environment. Hence it reduces the probability to get affected by bacteria.
