I don't know about lab test but I know this that on wheat chapatti the action of saliva is that it digests carbohydrates . that's why its said that carbohydrates are digested in our mouth.!!

If we mix the flour in the saliva the whole solution will become sweet for a certain reason.
Because,the amylase enzyme present in the human saliva will break down the large starch molecules into more smaller sugar molecules.
Due to the generation of the sugar,the whole solution becomes sweet in taste.
This experiment is conducted to demonstrate the effect of the saliva on the wheat flour.
