food items such as the mango, lime, olive and many others are spoiled by the action of bacteria and fungi. to prevent this, we often make pickle. here, when the food is kept int he mixture of salt and oil, the concentration of the solution is very much higher than the of the bacterial of fungal cell. this solution (hypersonic solution) results in the shrinking or rupturing of the bacterial cell saving the food from its effect.
