Protease works in the presence of hydrochloric acid in stomach and starts breaking long chains of amino acids into small chains.  

Three major protease enzymes are:

- Pepsin  

- Trypsin

- Chymotrypsin

Maxwell stomach will produce inactive form of pepsin called Pepsinogen which turns in its active form in the presence of hydrochloric acid and starts breaking amino chains.
