Answer:The souring of milk is a chemical reaction. Milk that is spoiled is sour, with a foul taste and odor. It can also become lumpy and curdled. Milk goes sour due to the chemical reaction of fermentation. Fermentation occurs when the sugars in the milk, called lactose, are consumed by bacteria.

Most bacteria in milk are killed in the process of pasteurization. However, some of the stronger bacteria survive and remain in the milk. As bacteria consume the lactose, these sugar molecules undergo a chemical reaction to become transformed into lactic acid. It is the lactic acid produced that causes the milk to taste and smell bad. In addition, lactic acid causes milk proteins to change their form and clump together to become curdled. This, like most chemical reactions, is an irreversible process.
