He does that because pea are legumes. Legumes are those plants which produce proteins by converting atmospheric nitrogen into proteins with the help of rhizobium bacteria.

Nitrogen is the main building block of life and plants depend on them for their growth. Crops like rice, wheat and corn etc. don’t hold nitrogen but instead consume it as much needed.
However nitrogen-fixing plants or legumes like peas and beans can fix nitrogen in the soil using bacteria in their roots.
So after harvesting crops like wheat, planting peas can increase the nitrogen content that has been consumed by previous plants.
