Sucrose is not a reducing sugar and the glycosidic bond is between the anomeric carbon of glucose and the anomeric carbon of fructose. Neither a free aldehyde group (on the glucose moiety) nor a free keto group (on the fructose moiety) is available to react unless the linkage between the monosaccharides is destroyed.

Ans➡️ Mutarotation is occurs when the hydroxyl group at the anomeric position switches configuration between alpha and beta.

Glucose and fructose can undergo mutarotation.
