The reaction would be the same with concentrated hydrochloric acid, there would just be less water.
You can test for the hydrogen by putting a test tube over your reaction flask to catch some of the hydrogen. Then AWAY FROM YOUR REACTION FLASK (Which i trust is in a well ventilated area) you can stick a lit splint into the test tube. If a pop occurs, you have hydrogen and your reaction was successful.
Using diluted HCL means that you will simply have to boil off more water to retrieve your zinc chloride in solid form.
Remember not to completely boil off water when removing a soluble salt, the salt could sometimes decompose or even crack your beaker.
