NaHCO3 releases CO2 and H2O on heating.

Following is the balanced reaction:

2NaHCO3(s) = Na2CO3(s) + CO2(g) + H2O(g).

Because of this reaction, it is often used in cooking under the name baking soda as it releases CO2 and produces foam as in cakes!
