To know Alcoholic Fermentation, we have to know what anaerobic respiration is.

 \underline {Anaerobic\:Respiration } is a kind of respiration in organisms in which the energy is released in the form of ATP in the absence of Oxygen. The main difference between Anaerobic and Aerobic Respiration is that the energy is released in a very low amount in Anaerobic Respiration.

In Aerobic Respiration, 38 ATP molecules are released whereas in Anaerobic one, only 2 molecules of ATP are released.

Now, Anaerobic Respiration is of two types-
⏺️Lactic Acid Formation
⏺️Alcoholic Fermentation
We will study both of them in brief.

 \textbf {LACTIC\:ACID\:FORMATION} :
This type of Anaerobic Respiration generally takes place in human muscles. This might happen when we exercise vigorously and there is a dearth of oxygen in the muscles. Large amount of Lactic Acid is accumulated which may lead to muscle cramps too.

 \textbf {ALCOHOLIC\:FERMENTATION} :
This type of Anaerobic Respiration takes place in yeast. It is mainly used in brewing and processing of wine, beer and alcohol.

Thus, the unicellular organism used for processing wine and beer is  \underline {Yeast} .
