Substrates of these enzymes are as follows:

a)  Trypsin - Proteins. Trypsin is secreted by pancreas and it primarily acts on the “interior bonds of proteins”.

b)   Amylase - Carbohydrate and starch. It is secreted by the "pancreas", and in mouth by the "salivary glands" and throat. Amylase acts upon starch and carbohydrates and then breaks them in down to simple sugars.

c)   Pepsin - Proteins. Pepsin is an endopeptidase secreted by the stomach. It acts on a large proteins and then breaks them down to small peptides.

d) Lipase - Fats. The pancreas are produced from the Lipase and it helps break down the fats to "glycerol and fatty acids".
