It has been reported that hand peeling of carrots increases the respiration rate over that of unpeeled carrots, by approximately 15%, whereas abrasion peeling almost doubles the respiration rate compared to hand peeled carrots (Ahvenainen, 1996). Carborundum abrasion peeled potatoes must be treated with a browning inhibitor, whereas washing is enough for hand peeled potatoes
