This process is called rancidity.
When oil and food are rancidized they become unfit for onsumption.
To prevent this, packets containg oil and food are flushed with nitrogen as the nitrogen prevents their contact with oxygen.

Nitrogen is an inert gas and does not easily react with the substances like fat and oil extra on the other hand oxygen react with food substances and make them rancid. thus, bags used in packing food items are flushed with Nitrogen gas to remove oxygen inside the pack. rancidity of oil and fat containing food items is avoided
