oil and fat containing food items are flushed with nitrogen? what is the reason behind this.

because it we will keep it in open then fats and oil will react with oxygen and rancidity will take place . so it is kept in nitrogen packets

Oil and fat containing food are flushed with nitrogen because if not done then the oil and fat will react with the atmospheric oxygen and become rancid. The food will get discolored and give out bad smell. Since nitrogen is unreactive, it prevents rancidity by replacing the oxygen with itself.
