Sugar has lot of - OH groups this groups are capable of making hydrogen bonds with water molecules these OH interactions are responsible for the water solubility

Because IT IS NOT TRUE that “organic compounds” are insoluble in water. A lot of molecules with a polar function (and a not too big hydrocarbon chain) are more or less soluble in water
