Potatoes provide carbohydrates, vitamins, minerals and water. Wash, peel, cut and then, cook the potatoes. Cooking in small amount of water and then frying in less quantity of oil conserves the nutrients present in it.

... We wash away potatoes for removing excessive starch from that to make them more crunchier for French fries or any other potato dish... :)
