Pickles did not spoil but sambar get s spoil why?

because pickles are having oil and salt in large amount which preserves them rather than sambhar

Pickles don't get spoilt that easily.
This is because pickles have a high concentration of salt in it.
We know that water moves from it's region of higher concentration to it's region if lower concentration.
Hence when bacteria gets on pickle water is drawn out of the Bacteria which causes it's death.
So bacterial action is very very less.
Therefore pickles don't get spoilt that easily.
On the other hand sambar itself has water in it.Hence when bacteria gets on it it doesn't draw water from it.
Therefore bacterial action is more which makes it stale .
