pickles do not spoil but sambar get spoil why

pickles contains preservatives while sambhar does not thats why pickels do not spoil but sambhar gets spoiled

Pickles do not get spoiled get there are preservatives like salt,vinegar and oil.While on the other hand sambhar gets spoiled because there is no preservatives in it .
