Pickles do not spoil, but sambar gets
spoiled soon. Why?

because sambhar contains different types of vegetables n due to acidity in it,it get spoils soon

pickle contain food preservative like lactic acid ,tetmaric ,salt etc in large number which help it to prevent from spoil .But in sambar limited amount of salt and turmeric only used as so it spoil soon
