plaster of paris ( pop) should be stored in a moisture proof container because plaster of paris , a powdery mass absorbs water (moisture) to form a hard solution known as gypsum hope u understand

it should be absorbed water from moisture and turn into hard substance called GYPSYM. Therefore, it gets waste.Just because it is stored in moisture proved container.
