Eggs are covered with a semi-permeable membrane, which allows water molecules to pass through. When you put a de-shelled egg into a salt water solution, water molecules pass from the egg, through this membrane, into the salt water solution . this will continue to happen till the water density on both sides is the same.

Since the egg is losing water, it will shrink. In other words, the egg is not actually losing any material . other than water.
