VSEPR(valance shell electron pair repulsion theory) theory explain this difference in angle.

As there is no lone electron pair in BF3 present then all the angle will 120 to keep the repulsion minimum between bond pair of electrons.

According to this theory:

   the valence electron pairs surrounding an atom tend to repel each other, and will therefore adopt an arrangement that minimizes this repulsion, thus determining the molecule's geometry.

In case of NH3 a lone pair is present, the lone pair is attracted by one nucleus only therefore it spreads out in space over the nucleus and suppresses the bond pair of electrons. Thus suppressing the angle between bonded electrons. FOR 107 degrees the repulsion between bond pair to lone pair and bond pair to bond pair is minimum.

Therefore NH3 has bond angle107 which is than BF3
