1. Glycosidic bond formation is involved in the reducing groups of glucose and fructose so sucrose is a non reducing sugar.
2. Sucrose is dextrorotatory. When it is hydrolysed dextrorotatory glucose and laevorotatory fructose is formed. It is observed that the laevorotation of fructose is more than the dextrorotation of glucose. So the mixture becomes laevorotatory. Hence hydrolysis brings a change in dextrorotatory to laevorotatory sucrose, so the product is named as an invert sugar.
