Human have a very greedy nature.we always want more than we should take.Our greed makes us blind and makes us lose the things we already have.The idiom a bird in hand is worth two in Bush means that what we are currently having is better than what we don't have.Giving importance to things which we dont have and neglecting the things we do have results in the loss of both.

He immediately jumped into the river to get what he thought was another bone. In the process he lost his own bone.
