The flap is made of elastic cartilage covered with a mucous membrane, attached to the entrance of the larynx.....

But to prevent the passage of food into the wind pipe

epiglottis closes the entrance into the wind pipe as a result the food is forced to move into the food pipe and hence reaches the targeted organ i.e; stomach.

when food enters into the wind pipe by mistake, then we make a cough in order to remove the food from the wind pipe.
