Potato is the root of the potato plant.

Potato is actually an underground stem. The underground stem of this is referred to as swollen and it is a bulged structure that grows somewhat horizontally under the ground. This swollem stem has buds on it, which under the right conditions can lead to the growth of a new plant. The presence of these buds make it a stem, because roots do not have buds from which new plants can come.
