Butter milk being churned with curd does not contain Lactobacillus, the bacteria responsible for multiplication of curd. So, if we add any buttermilk to the milk to obtain curd we won't get a positive result.

Butter milk doesn't turn the milk into the curd because-

  • Butter milk is composed of water, lactose(the milk sugar) and protein casein .
  • As to  convert milk into curd ,there should be a chemical reaction between Lactic acid bacteria and casein.
  • And Lactic acid bacteria is absent in buttermilk ,while the main component of curd is Lactic acid.
