Volatile memory needs power to store data. When power is lost, so is the data. It also happens to be the fastest kind of memory right now, so we use it quite a lot. You just have to make sure your device has reliable power.

Nonvolatile memory retains data even after power is lost. We'd use it for everything if we could, but unfortunately the only inexpensive nonvolatile memoty we have these days is also very slow. So we use it for things like file storage. Embedded devices also use it to store configuration data so that they can be powered off an back on without much trouble.

Hopefully at some point we'll have fast, cheap, nonvolatile memory. Imagine working at your computer, losing power, and picking up right where you left off when power is restored.
