1. Rancidity is a process in which the food containing moisture if kept outside in an open space in contact with oxygen for long the food becomes rancid( not fit for eating.)
2. Their prevention can be done by packing them in nitrogen packets.
For Example- Chips that r readily available in the market is protected by adding nitrogen gas in the packets.
Nitrogen does not reacts with oxygen.
3. Some antioxidants r also used such as.....
a. BHT- Butylated Hydroxy Toluene.
