Rashi peeled some potatoes and cut them into small pieces. She washed and boiled them in water. She threw away the excess water and fried them in oil adding salt and spices. Although the potato dish tasted very good, its nutrient value was less. Suggest a method of cooking potatoes that will not lower the nutrients in them.

Answer:

Boil potatoes with skin- Boiling potatoes can lower their nutritional content like vitamin C and B vitamins if they are boiled without skin. Boiling them with skin can save nutrients that may lost in cooking water. Try to use minimal water like with steaming.

Explanation:

  • IF VEGETABLES ARE WASHED AFTER CUTTING OR PEELING THEM, IT CAUSES A LOSS OF VITAMINS AS SKINS OF MANY VEGETABLES AND FRUITS CONTAIN VITAMINS AND MINERALS
  • REPEATED WASHING OF RICE AND PULSES CAUSES A LOSS OF VITAMINS
  • IF EXCESSIVE WATER IS USED DURING COOKING AND THROWN AWAY, IT CAUSES A LOSS OF USEFUL PROTEINS AND MINERALS
  • VITAMIN C IS EASILY DESTROYED DUE TO HEAT DURING COOKINGB

Washing and boiling them in water first and then peel of the skin
