Jams and pickles can be kept outside because they dont need to be preserved in refrigerator.When they are manufacturerd they are pickle is preserved by adding salt and jam by adding sugar.Salt and sugar are natural preservatives which prevents the growth of bacteria in food.Thus,save food from getting spoiled. Raw vegetables and fruits aren't treated with any preservatives so they are attacked by microbes quickly and leads to spoiling if the fruits aren't kept in cool and dry place
WHEREAS
Pickles are treated with salt to avoid attack by microbes as putting salt in pickles plasmolyse microbial cells
Jams are treated with sugar to avoid attacks(The reason is same as above)
