Sodium acetate will remain in solution. If solution is basic then you will get Cu(OH)2 precipitate. But, acetate will manage the acidic pH due to formation of acetic acid (proton from water). Several reports are available for formation CuO nanoparticles from starting components Cu(Acetate)2 and NaOH.
