as a whole bunch or volume of some x amount of sugar, the material takes the shape of the container but each sugar crystal individually retains its shape whether you keep in in a round container or on your hand or even in a jar. so, sugars are solids, each crystal has a fixed shape although the x amount of sugar behaves like a fluid when poured or spilt
