Actually, Rheo leaves are discoloured during boiling process. On further boiling, the cells will die. It is kept in sugar solution (hypertonic), when kept to the boiled Rheo leaves, there is no change observed.
When rheo leaves is boiled, it gets shrunk because of the high temperature. The content present inside the leaves tends to vome out due to osmosis at first while heating.
On further boiling cells may get destroyed. That would cause the cells to die.
Therefore on addition of sugar syrup no more osmosis will take place. and this may save the cell.
