Vegetables are dried to ensure dehydration. Dehydration inhibits microbial growth and helps in the preparation of good pickles.

After pickle has been prepared, oil is poured all over it in layers. This is done to prevent formation of air bubbles.

Hope this helps you ☺️

Drying help vegetables to eliminate the room for oxidation and the presence of moisture within.

Explanation :

  • The raw vegetables contain water presence within them. If one goes for pickling them without drying them, the pickle will be spoilt. The signs for this are :

        1. Bad Smell

        2. Change in color

        3. Mold or organic growth presence

  • To remove the water content, the vegetables are dried in the presence of sunlight before pickling. This helps in drying out the moisture present inside the pieces.

  • Post pickling, the pickle is completely submerged in the oil. This helps in avoiding the pickle to get into the contact with the atmospheric air bubbles. The salt present within, helps in keeping the pieces healthy.

  • Post pikling, the pickle should be stored in air tight containers to stop the process of oxidation.
