When the mixture was heated, iron and sulphur reacted with each other. When he just mixed it, the both didnt react with each other, it was still two different elements- iron and sulphur. He would have been able to separate those again. The main point was that no new substance was formed, it was still iron and sulphur. There was no change at their atomic level and their chemical composition was same.

But after heating, the molecules of iron and sulphur reacted with each other. The molecules of iron and sulphur reacted and formed a compound- Iron sulphide. Their chemical composition changed from iron and sulphur to Iron sulphide. So the new substance was formed that is Iron sulphide(compound).
