Pepsin is the most prominent enzyme digesting (food) proteins in the acidic milieu of the stomach.It releases polypeptides and amino acids from digested proteins. Pepsin does also cleave nucleic acids into smaller fragments. Pepsin is effective and essential for digestion as well as for protection.
