Semolina do not get spoiled for a very long time.But kheer made from spoil easily why is this so

Semolina is in dry form. Dry things can keep up for a long time as its enzymes are dormant for a long time. When we heat it, the protein gets heated and breaks. Hence, kheer gets spoiled after a while but semolina does not get spoiled.

Semolina does not get spoiled as it is dry but when kheer is cooked with it spoils easily, as milk and sugar tend to spoil if not stored properly.  

Explanation:

  • Dry items like uncooked rice, pasta, semolina are all forms of carbohydrate but they do not get spoiled as the uncooked form does not contain any water, and hence it does not provide a favorable base for microorganisms to grow.
  • Once cooked, however, the carbohydrate attains an easily decomposable form and hence can get spoiled more easily.
  • The same phenomenon occurs with other forms of har carbohydrate as well.
