The small intestine absorbs all the nutrients from the food except water. The food came into it's semi-solid form. The small intestine passes all the nutrients to the blood.

Essential nutrients such as glucose, glucagon, etc. are absorbed whereas the water is later absorbed into the large intestine. The food or the substance is in a slimy semi-solid form at that stage.
