Sodium chloride [NaCl] melts at 801°C while methane [CH₄] melts at -183°C.

There is a simple reason for this. NaCl is an ionic compound, which means that the cation {Na+} and the anion {Cl-} have a strong force of attraction between them as opposed to those of CH₄, which is a compound formed due to covalent bonds which do not have a high force of attraction.
