Because Sodium is a highly reactive metal. The h2 gas produced when hitting with water instantly catches fire . The reaction is highly exothermic giving a lot of heat out.

Sodium has valency 1 and has a very low IP ,so it reacts with water and forms NaOH . The reaction is so vigrous that it catches fire.
