Curd can taste bitter sometimes if the the fermentation is in excess than the required amount.During the fermentation process the lactose present in the milk is converted to lactic acid under ambient environmental conditions.When the optimum consistency is reached it has to be refrigerated to stop the fermentation process .If this is not done then the fermentation continues and more amount of lactic acid is produced and turns the curd bitter.
