Souring of milk is a fermentation process carried out by Lactobacillus fermentumbacteria, responsible to convert lactose present in milk to lactic acid, thus making milk acidic. The lactose fermenting bacteria are facultative anaerobic and therefore can survive in the absence of oxygen.
