South indian use.....oil as medium.......

Explanation:
Well.! Let me ask you a counter question. Why do people of North India generalize one state's cuisine as the entire South Indian food?
There are 5 states in South India- Telangana, Andhra Pradesh, Karnataka, Kerala, and Tamil Nadu.
Coconut oil is used only in dishes prepared in Kerala. That's slowly changing these days- people seem to be adapting to refined oils sadly.
Coming back to the question, why do Kerala people use coconut oil in food? Hmm… different oils are being used in different states depending on the abundance of the oil yielding crop and the climate of the place. For example, Sesame Oil and Groundnut oil were used in Telangana before the refined oils happened. That's because Sesame and Groundnut crop was grown in abundance, and suited the body needs of the people living here.
Same goes with coconut oil. Coconut is available in abundance in Kerala, and suits the body needs of the people there. Coconut oil is not used in areas with sunny weather. Kerala has a cool climate for most of the year. Hence, coconut oil keeps the body warm. They use it not only for cooking but on hair and body too. It provides enough moisture and keeps the hair and body nourished.
