Since it has a high specific heat capacity it takes high amount of heat to reach at certain temp while other liquids takes more less amount of heat to reach at same temp.
now we use it in thermal power plants because it will take large amount of heat from pipes to heat up and pipes have to loose a large amount of heat to warm the water and cools it very fast.
