During summers, the lactobacillus bacteria present in milk start multiplying and make it sour, so as to neutralize this a small amount of baking soda, which is basic in nature is added by the milkman.

Becoz baking soda is a base which reacts with acids and neutralizes it. This prevents milk from getting sour and keeping it fresh for long time....
